Tumeric Blueberry Banana Bread

This banana bread is so tasty and packed with nutrition! If you have specific food allergies, this recipe might be suitable as it is free from egg and dairy and can easily be made gluten free by substituting for a gluten free flour. The tumeric is mostly for colour and gives the bread a slightly different flavour. If you are a little hesitant, start with 1-2 tsp and see how you go! But if you love tumeric like me, you might even find that you want to add more. It's delicious!
Tumeric Blueberry Banana Bread
Makes 10 slices
Ingredients

2 mashed ripe bananas

1 sliced banana for decoration

1 1/4 cup plain wholemeal flour

1 tsp baking powder

pinch salt

1 tsp cinnamon

1/2 cup sunflower oil (or any light coloured oil)

1/2 cup plant based milk

1 tsp vanilla essence

1/4 cup blueberries

1 tbs tumeric
Method

Pre-heat oven to 180°c

In a mixing bowl, mash the banana then add all other ingredients (except the banana for decoration). Mix to combine

Pour into a lined loaf tray

Top with sliced banana and bake for 30-35 mins or until a skewer comes out clean.

Cool before slicing
