Lentil & Bacon Soup

Soup is such a comfort food. I love hugging a big bowl in Winter while is warms me up from the inside. This recipe is a childhood favourite that my Mum used to make with smoked ribs. I tweaked the recipe a little by using bacon. This is so hearty and full of fibre from the lentils.
Lentil & Bacon Soup
Serves 4
Ingredients

1 onion, diced

1 tbs olive oil
-
4 rashers smoked bacon, rind removed and sliced into 2-3cm strips

1 1/2 cups dry lentils, rinsed

3 carrots, sliced

3 celery sticks, sliced

2 gloves garlic, crushed

2 tsp vegetable stock
-
1 tsp pepper
-
3 cups of water, plus 2 extra
Method

Fry onion in oil over low-medium heat in a medium size pot until soft

Add bacon and cook for 2 mins

Add remaining ingredients (only 3 cups water), cover with lid and reduce heat to low
-
After 30 mins add extra water
-
Leave for another 1.5 hours until most of the water is absorbed and the lentils are soft
