Harissa Eggplant

If you love eggplant and a bit of spice then you will love this! If you are new to spicy foods, I recommend reducing the Harissa paste by half to see how you tolerate the heat.
Harissa Eggplant
Serves 4 as a side
Ingredients

2 small eggplant, cut into large cubes

3 tbs extra virgin olive oil

2 tbs harissa paste
-
1 tbs honey
-
2 tsp soy sauce
-
Sprinkle of sesame seeds
Method
-
Heat oil over medium heat in a frypan

Add eggplant and cook, stirring occasionally for 15 minutes, or until soft

Add remaining ingredients and coat eggplant
-
Cook for a further 5 minutes

Transfer to bowel and sprinkle with sesame seeds
