Coconut Bliss Balls

Bliss balls are easy to make, much cheaper than buying and keep well in the fridge for up to two weeks. I usually make a big batch on the weekend and freeze them, only taking out a couple when I need it. 

Coconut Bliss Balls

Makes 10

Ingredients

  • 2 medjool dates or 4 dried dates pit removed (can swap with dried apricot)

  • 1/4 cup boiling water

  • 1 cup almond meal

  • 1/2 cup porridge oats (quick oats)

  • 1 tbs maple syrup

  • 2 tbs tahini

  • 2 tbs coconut oil, melted

  • 1/2 cup shredded coconut, plus extra for rolling

  • Pinch of salt

Method

  1. Place dates in a small bowl or a mug and cover with boiling water for 2 minutes to soften

  2. Add remaining ingredients in a mixing bowl

  3. Add dates and 1/2 tbs of the hot water to the mixing bowl

  4. Using hands, mix ingredients to combine, breaking up dates to help mixture come together

  5. Add a dash more hot water if required to make mixture moist enough to roll into balls

  6. Roll into 10 balls

  7. Spread some coconut on a flat surface or plate

  8. Roll balls through coconut to decorate

  9. Refrigerate for 30 minutes before serving
