Coconut Bliss Balls

Bliss balls are easy to make, much cheaper than buying and keep well in the fridge for up to two weeks. I usually make a big batch on the weekend and freeze them, only taking out a couple when I need it.
Coconut Bliss Balls
Makes 10
Ingredients

2 medjool dates or 4 dried dates pit removed (can swap with dried apricot)

1/4 cup boiling water

1 cup almond meal
-
1/2 cup porridge oats (quick oats)

1 tbs maple syrup

2 tbs tahini
-
2 tbs coconut oil, melted

1/2 cup shredded coconut, plus extra for rolling

Pinch of salt
Method

Place dates in a small bowl or a mug and cover with boiling water for 2 minutes to soften

Add remaining ingredients in a mixing bowl

Add dates and 1/2 tbs of the hot water to the mixing bowl

Using hands, mix ingredients to combine, breaking up dates to help mixture come together

Add a dash more hot water if required to make mixture moist enough to roll into balls

Roll into 10 balls

Spread some coconut on a flat surface or plate

Roll balls through coconut to decorate

Refrigerate for 30 minutes before serving
