Carrot Cake Porridge

Carrot cake is one of my favourite soul foods so I had to try making a carrot cake porridge. A great alternative to your tradiitonal oats and a way to bump up your veg intake if that is something that you are mindfulof. You could also try baking it in the oven after cooking to crisp up the top. 

Carrot Cake Porridge

Serves 1


  • 1/2 cup rolled oats

  • 3/4 - 1 cup milk of choice

  • 1 tsp cinnamon

  • 1/4 tsp ground ginger

  • Pinch of salt

  • 1/2 small carrot, finely grated

  • 1 tbs currants or sultanas

  • Greek yoghurt for topping

  • Almond butter for topping

  • Honey to drizzle


  1. Add oats, 3/4 cup of milk, spices, salt and carrot into a small pan

  2. Heat on medium-high heat, stirring consistently for 2-3 minutes until the oats begin to thicken. Add the remaining 1/4 cup milk if desired for a thinner texture

  3. Stir through the dried fruit

  4. Pour into a bowl and top with Greek yoghurt, almond butter and honey
