Butterbean Beetroot Hummus

Hummus is a fantastic high protein snack, toast topper or addition to a salad or nourish bowl. Substituting the usual chickpeas with butter beans makes this hummus delightfully smooth and creamy. This hummus is oil free as it uses aquafaba (a.k.a the liquid in the can)

Butterbean Beetroot Hummus

Serves: 2-8 depending on how it is eaten


  • 1 can butter beans drained (remember to keep the aquafaba)

  • 1 heaped tsp ground cumin

  • 1 garlic clove

  • Juice from 1 lemon

  • 300g tinned or pre-cooked beetroot

  • 2 heaped tbs tahini

  • 1/4 cup to 1/3 cup of the aquafaba


  1. In a food processor add all ingredients, including 1/4 cup of the aquafaba

  2. Blend well, adding a dash more of aquafaba at a time to thin until smooth and creamy

  3. Season with salt and pepper to taste and a sprinkle of pumpkin seeds for decoration

  4. Serve with crackers
