Zucchini & Carrot Slice

This slice is so versatile. You can eat it for lunch and dinner with a side salad or as a snack. I like to slice it into single portions after cooking and place them in the freezer for when I need a quick meal.
Zucchini & Carrot Slice
Serves 6
Ingredients

2 carrots, grated

2 zucchini, grated

Half a brown onion, grated or diced

7 medium-large eggs
-
100g sliced ham (optional)

100g tasty or cheddar cheese, grated

1tsp tumeric
-
Pepper to taste

3/4 cup self-raising flour
Tip: if you have a food processor, use it for the carrot, zucchini, onion and cheese. It saves a bit of time
Method

Pre-heat oven to 180°c

Add all ingredients in a large bowl

Mix until combined
-
Pour into a lined rectangle baking dish

Cook for about 30 minutes or until top is golden brown
