Peanut Butter Oat Bar

These are the best grab-and-go snack! Super easy to make and a great addition to your lunchbox.
Peanut Butter Oat Bar
Makes 12 bars
Ingredients

8 dried dates
-
1 tbs boiling water

1/3 cup peanut butter

¼ cup coconut oil
-
1 tbs honey
-
¼ cup milk of choice
-
1 ½ cups rolled oats
-
½ cup self-raising flour
-
2 tbs chia seeds
-
40g dark chocolate with 2 tsp peanut butter for sauce
Method

Pre-heat oven to 180°c

Line a small baking dish with baking paper

Soak dates in a small bowl with water for a few minutes

In a small pan, add peanut butter, oil, milk and honey. Stir over medium heat until melted

Add oats, flour and chia seeds in a mixing bowl, stir and make a well in the centre

Pour wet ingredients into the well, add the dates and mix to combine

Transfer into the baking dish and press down firmly

Bake for 20 minutes then set aside to cool

Melt chocolate with peanut butter and drizzle over the loaf (tip: I melt the chocolate and peanut butter in a bowl and then transfer to a square of cling film. Twist to close and then at the bottom pierce a very small hole with the tip of a knife and voila, you have a piping bag!)

Slice into 12 bars. Keep in the fridge for up to 2 weeks.
