PB & Berry Baked Porridge

Recipe created in collaboration with The Chia Co for a giveaway on Instagram using The Chia Co, Pics Peanut Butter and Tea Pigs Tea products. 

PB & Berry Baked Porridge

Serves 4-6


  • 1.5 cups blueberries

  • 2 tbs chia eggs (2 tbs + 3 tbs water)

  • 2 cups rolled oats

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • Pinch salt

  • 1/3 cup shredded coconut

  • 1.5 cups milk of choice + 1/4 cup extra

  • 1/4 cup peanut butter

  • 1 tsp vanilla extract

  • 2 tbs maple syrup

  • Topping: 1 tbs coconut, 1 tbs pumpkin seeds


  1. Pre-heat oven to 180 degrees and grease a square baking dish with butter/oil

  2. Scatter 1 cup of the blueberries on the bottom of the dish

  3. Make the chia eggs by mixing the seeds and water in a mug and let stand in the fridge for 5 minutes

  4. Add oats, baking powder, cinnamon, salt and coconut in a medium mixing bowl to combine

  5. In a separate bowl, add chia eggs, milk, vanilla, maple syrup and peanut butter and mix well

  6. Add wet ingredients to dry and gently mix through

  7. Pour into baking dish and press down with the back of a fork

  8. Scatter remaining blueberries

  9. Pour over remaining milk and sprinkle toppings

  10. Cook for 30-35 minutes until golden brown

  11. Serve warm with Greek yoghurt and a cup of tea
