One Tray Satay Chicken

One tray meals are a life-saver! I absolutely love satay chicken and this meal does not disappoint. I made this for a dinner party and it got devoured!
One Tray Satay Chicken
Serves 4
Ingredients
For the satay sauce:

4 heaped tbs crunchy peanut butter
-
4 tbs milk
-
2 tbs soy sauce
-
1 red chilli, seeds removed and chopped finely
-
2 tsp coconut oil (melted)
-
3cm knob of fresh ginger, finely grated
-
1 garlic clove, finely chopped
For the tray:
-
4 chicken breast
-
200g broccolini, washed
-
200g asparagus spears, trimmed and washed
-
200g sugar snap peas, washed
-
2 tbs sesame seeds
-
1 lemon, quartered
Basmati rice or quinoa to serve
Method

Pre-heat oven to 180°c
-
Line 1 large baking tray (with high rim) with baking paper

Mix all ingredients for the satay sauce in a small mixing bowl

Add chicken and mix to coat
-
Place chicken on the tray and cook for 10 minutes
-
Remove from oven, and place greens around and on top of the chicken breast
-
Sprinkle sesame seeds
-
Squeeze each piece of lemon over the chicken and then add to the tray
-
Cook for a further 5-10 minutes. Check the chicken to ensure that it is cooked through before eating
-
Serve with rice or quinoa
