One Tray Satay Chicken

One tray meals are a life-saver! I absolutely love satay chicken and this meal does not disappoint. I made this for a dinner party and it got devoured!

One Tray Satay Chicken

Serves 4

Ingredients

For the satay sauce:

  • 4 heaped tbs crunchy peanut butter

  • 4 tbs milk

  • 2 tbs soy sauce

  • 1 red chilli, seeds removed and chopped finely

  • 2 tsp coconut oil (melted)

  • 3cm knob of fresh ginger, finely grated

  • 1 garlic clove, finely chopped

 

For the tray:

  • 4 chicken breast

  • 200g broccolini, washed

  • 200g asparagus spears, trimmed and washed

  • 200g sugar snap peas, washed

  • 2 tbs sesame seeds

  • 1 lemon, quartered

Basmati rice or quinoa to serve

Method

  1. Pre-heat oven to 180°c

  2. Line 1 large baking tray (with high rim) with baking paper

  3. Mix all ingredients for the satay sauce in a small mixing bowl

  4. Add chicken and mix to coat

  5. Place chicken on the tray and cook for 10 minutes

  6. Remove from oven, and place greens around and on top of the chicken breast

  7. Sprinkle sesame seeds

  8. Squeeze each piece of lemon over the chicken and then add to the tray

  9. Cook for a further 5-10 minutes. Check the chicken to ensure that it is cooked through before eating

  10. Serve with rice or quinoa
