Nut Butter Stuffed Dates

My new favourite dessert! These are heavenly! Stuffed dates are so easy to make I can't believe it took me this long to try them! I used medjool dates as they are big and juicy so fit more nut butter inside (which is the most important part).
Nut Butter Stuffed Dates
Makes 6
Ingredients

6 Medjool dates

Up to 6 tsp peanut butter and/or almond butter

Up to 12 peanuts and/or roasted almonds (optional)

Dark chocolate (about 60g)

Desiccated coconut for decoration
Method

Make an incision lengthways to remove the pit, repeat with remaining dates

Spread a part slightly and fill with 1/2 - 1 tsp of either peanut butter or almond butter (I did half and half)

Add 1-2 nuts to match the nut butter of choice (optional). I like this as it adds crunch

Melt dark chocolate in a bowl

Close the dates and roll them in melted chocolate then pop on a tray or plate covered with baking paper

Sprinkle with desiccated coconut

Place in the fridge for 30 minutes to set
These will keep in the fridge for up to 2 weeks and can also be stored and eaten straight out of the freezer
