Honey Roasted Carrot & Parsnip

Roasting brings out a lovely caramel flavour and these vegetables go well with a roast, in a salad or on their own as a snack dipped into hummus. 

Honey Roasted Carrot & Parsnip

Serves 4-6


  • 2 large carrots, sliced into batons

  • 2 large parsnips, sliced into batons

  • 3 tbs honey (plus extra to serve)1 tbs olive oil

  • 2 tsp orange zest

  • Salt and pepper

  • 2 tbs chopped pecans

  • 2 tbs dried cranberries


  1. Pre-heat oven to 180⁰c and line 2 baking trays with baking paper

  2. Place carrot and parsnip in a mixing bowl with honey, oil, orange zest, salt and pepper to taste

  3. Toss to combine and spread evenly on baking trays

  4. Cook for 30-40 minutes until crispy on edges

  5. Place on a serving platter and decorate with pecans, cranberries and and a drizzle of honey
