High Fibre Choc Cookies

These cookies are loaded with extra fibre and protein thanks to their secret weapon... chickpeas! I love experimental baking with vegetables and this snack combines the delicious and feel-good taste of dark chocolate and sweet currents, with the crumbly texture of chickpeas.
These are "better" that your standard choc chip cookie, but if you are looking for ways to add legumes in your life, this recipe could be for you
High Fibre Choc Cookies
Makes 12
Ingredients
1 can chickpeas, rinsed
1/3 cup natural peanut butter
1 tsp baking powder
½ cup rolled oats
2 tsp honey or maple syrup
1/3 cup pepita seeds
½ cup currants
50g dark chocolate (or chocolate buds), chopped roughly
Method
Pre-heat oven to 180°c and line a baking tray with baking paper
Add chickpeas, peanut butter, baking powder, oats and honey in a food processor and blend until dough-like consistency forms
Transfer into a bowl and add currants, seeds and chocolate. Fold through (you might need to use your hands here)
Roll into 12 balls
Place on the baking tray and using a fork, slightly flatten each ball
Cook for 15 minutes or until light brown
