Halloumi Breakfast Bowl

Even if you are a sweet tooth like me, I can guarantee that you will love this savoury breaky bowl! In fact, don't just limit it to breakfast. You can have this at any time of the day!

 

If you don't like halloumi you can substitute this with poached eggs or smoked salmon.



 

Halloumi Breakfast Bowl

Makes 4

Ingredients

  • 200g brocollini, ends trimmed

  • 1 tbs extra virgin olive oil

  • 1 lemon

  • 2 handfuls of baby spinach

  • 200g halloumi, sliced length-ways into 8

  • 4 slices of sourdough or gluten free alternative

  • Pumpkin hummus

    (see recipe here)

  • Dukkah of choice

Method

  1. Saute brocollini in olive oil and a big squeeze of lemon juice in a fry pan on medium heat until the ends turn a little crispy (a few minutes on each side)

  2. Add baby spinach to the pan and cook until wilted. Set aside on a plate

  3. Grill halloumi on both sides until crispy and brown (2-3 minutes on each side)

  4. Toast the sourdough 

  5. Make the hummus (if you don't already have it in your fridge)

  6. Assemble and divide the pumpkin hummus, greens and halloumi onto 4 plates. Add a slice of toast

  7. Drizzle with extra olive oil and lemon juice

  8. Sprinkle with dukkah (if you're in Australia I love the dukkah from
