Christmas Spice Granola

This granola recipe has added spices that smell like Christmas! I love making a big batch and gifting it in jars or you can keep it for yourself and eat it with yoghurt and fruit or add as a topping with porridge. Don't just save this for Christmas - it can be eaten all year round!
Christmas Spice Granola
Serves- to hunger
Ingredients

1 1/2 cups puffed wheat (or puffed quinoa or rice)

1/2 cup rolled oats

1/4 cup chopped macadamia nuts

1/4 cup chopped pistachio nuts

1/4 cup pepita seeds

1/2 cup coconut flakes
-
2 tbs coconut oil (melted)

2 tbs date or maple syrup

1 1/2 tsp cinnamon
-
1 tsp ground ginger
-
A pinch of ground clove

A pinch of salt

1/3 cup dried cranberries
Method
-
Pre-heat oven to 180 degrees Celsius

Add all ingredients in a bowl and mix to coat puffed wheat

Spread evenly on a baking tray lined with baking paper

Cook for 15 minutes

While cooling pour 1/3 cup dried cranberries over the granola

Store in an airtight container for up to 3 months
