Chocolate Surprise Muffins

This healthy muffin not only has hidden vegetables, but also a little piece of heaven (aka dark chocolate) inside. These make the perfect snack as they are not only delicious but extremely satisfying. I freeze these and use them when needed throughout the week. This recipe is gluten free and can be made dairy free by following the substitutions recommended.

Chocolate Surprise Muffins

Makes 12


  • 1 small sweet potato, peeled and cubed

  • 1/4 cup desiccated coconut

  • 1 cup almond meal

  • 2 tsp baking powder

  • 1/4 cup cacao powder

  • 1 tsp cinnamon

  • 3 eggs

  • 1/4 cup coconut oil

  • 1 banana, mashed

  • 1/4 cup yoghurt (can use soya or coconut)

  • 12 squares dark chocolate (can use dairy free chocolate)

  • Slivered almonds for decoration


1. Pre-heat oven to 180°c and prepare 12-capacity muffin tray with baking paper or oil

2. Steam or microwave sweet potato until soft enough to mash (about 3-5 minutes)

3. In a mixing bowl add 1 cup mashed sweet potato with all ingredients EXCEPT chocolate and slivered almonds

4. Pour into muffin tray

5. Push 1 square of chocolate into the middle of each muffin

6. Sprinkle with almond

7. Bake for 15-20 minutes

8. Serve warm to enjoy the chocolate goodness
