Chickpea Patties

Chickpeas have to be my favourite legume! They are so versatile and a great source of fibre and protein. I love making these as part of my Sunday meal prep and freezing them for when I need a quick meal later in the week. They can be eaten alone as a snack, served in a burger or added to a salad.
Chickpea Patties
Makes 8
Ingredients

1 brown onion, quartered

2 cloves garlic
-
1 1/2 cans chickpeas, rinsed and drained

1 egg
-
1/2 cup breadcrumbs

2 tsp ground cumin
-
1 tsp tumeric
-
1/2 cup chopped coriander
-
2 tbs olive oil for cooking
Method

Place onion and garlic in a food processor and blend until finely chopped

Add chickpeas, egg, bread crumbs and spices. Blend until most of the chickpeas have broken down (I like it when there are still a few whole ones as it gives it a nice texture)

Pour into a bowl and stir through the coriander

Using hands, roll into 8 balls

Heat fry pan over medium-high heat with 1 tbs oil

Place 4 balls into the pan and flatten with the back of a slotted turner

Cook for 2 minutes on each side or until brown

Remove from the pan and repeat steps 6-7 with remaining balls
Serve with hummus, in a burger or with a salad
