Burrito Bowl

Next time you make a burrito, spice things up and turn it into a bowl instead! I love Mexican as the meals are always fresh, packed with veggies and so easy to make. You can substitute the 3-bean mix for any other protein source such as taco mince, grilled chicken, prawns or tofu.
Burrito Bowl
Serves 4
Ingredients

4 wholemeal tortilla wraps

Olive oil spray
-
1/2 an iceberg lettuce, shredded

3 small tomatoes, diced
-
2 cups corn kernels, rinsed and drained

1 cup grated cheddar cheese
-
2 small avocados, mashed
-
1 lime
-
8 tbs Greek yoghurt
Note: you will need 4 deep bowls to cook the tortilla wraps
Method

Pre-heat oven to 180°c

Place each tortilla wrap into a separate bowl, pressing down so that it takes the same shape. Spray lightly with olive oil

Bake in the oven for 5 minutes, then gently remove the wraps from the bowls and place them on a plate or baking tray and return to the oven for a further 5 minutes. Set aside

Mix the juice from the lime and the avocado in a small bowl

To assemble, place the tortilla bowls on a serving plate. Divide the lettuce equally to fill the bottom of each bowl

Top with remaining ingredients
