Breakfast Crumble

I had originally intended to make this as a dessert, but instead I divided it into some containers with Greek yoghurt and took it to work for breakfast. Eat this for breakfast, dessert or as a snack. Whatever works for you!
Breakfast Crumble
Serves 4
Ingredients
4 apples, cored and diced into 2cm cubes
2 tsp cinnamon
1 tsp vanilla extract
2 tbs water
60g butter, melted
80g plain flour
60g oats
2 tbs sunflower seeds
20g macadamia nuts roughly chopped
20g walnuts roughly chopped
Method
Pre-heat oven to 180°c
Heat a small saucepan on medium heat
Add apples, water, vanilla and cinnamon and simmer, stirring occasionally until apple has softened
While the apple is cooking, add all remaining ingredients into a small bowl and mix until combined. The crumble should resemble small pebbles
Pour the apple into a square baking dish
Top with the crumble mixture and press down softly to flatten
Cook in the oven for 10 minutes
Serve with Greek yoghurt
