Blueberry Banana Muffins

You just can't go wrong with muffins. An delicious snack, perfectly paired with a cup of tea. I love making muffins at home so that I can make them that little bit healthier by tweaking the ingredients to increase fibre and reduce added sugars. Keep these frozen if you don't think they'll get eaten in a few days.
Blueberry Banana Muffins
Makes 12
Ingredients

1 ripe banana, mashed

1/3 cup canola or sunflower oil

1 egg

1/2 cup milk of choice
-
1/2 cup Greek yoghurt

1 1/4 cups All Bran

1 1/2 cups plain wholemeal flour

1/3 cup brown sugar

2 tsp cinnamon
-
1 1/2 tsp baking powder

1 cup blueberries.
Method

Pre-heat oven to 180°c and prepare a 12 hole muffin tray

Add banana, oil, egg, milk and Greek yoghurt into a mixing bowl. Mix to combine

Then add all remaining ingredients except the blueberries

Gently fold together, careful not to over mix

Fold through blueberries

Cook for 20 minutes or until skewer comes out clean when inserted
