Haddock Tray Bake

I love a one tray bake! Perfect for a mid-week dinner. You can use other vegetables you have available. Cauliflower, brocolli or beans all work well

Haddock Tray Bake

Serves 2

Ingredients

  • 2 fillets haddock

  • 2 medium potatoes, washed and sliced into wedges

  • 1 capsicum, sliced into chunks

  • 1 zucchini, cut into 3cm chunks

  • 6 spears of asparagus, ends trimmed

  • Half a red onion, cut into wedges

  • 1 clove garlic, crushed

  • 5 basil leaves, finely chopped

  • 10 cherry tomatoes, quartered

  • Extra virgin olive oil

  • Salt and pepper

Method

  1. Pre-heat oven to 180°c and line a large baking tray with baking paper

  2. Dress potato with 1 tbs olive oil, salt and pepper in a large bowl and then place on the baking tray

  3. Bake in the oven for 15 minutes then remove to add other ingredients

  4. While the potato cooks make the tomato salsa by mixing chopped tomato, garlic, salt, pepper and basil leaves in a small bowl

  5. Make room for the haddock fillets on the baking tray. Top the fillets with the salsa and scatter all the vegetables around the fillets on the tray

  6. Bake for a further 15 minutes

  7. Serve and enjoy
