Christmas Tree Pancakes

Is there a better way to start Christmas morning than with Christmas Tree Pancakes? These are so much fun to make with the family and you can decorate the trees with different seasonal fruits.
Christmas Tree Pancakes
1 large or 2 small trees
Ingredients

Large handful of baby spinach

1 banana
-
1/2 cup self-raising flour

1 tbs maple syrup

Drop of vanilla extract
-
1/3 cup milk of choice
-
1 egg
-
1 heaped tbs almond meal
-
2 cups strawberries, sliced

Yoghurt of choice for layering (I used Greek yoghurt)

Shredded coconut and maple syrup to serve
Method

Create a star from a slice of banana (keeping the leftover for the batter) and set aside

To create pancake batter add spinach, remaining banana, flour, syrup, vanilla, milk, egg and almond meal in a mixing bowl

Blend using a stick blender until smooth

Heat a non-stick fry pan on medium-high heat

Spoon varying amounts of batter (you need large, medium and small pancakes to make the tree) into the pan, cook on one side until bubbles start to form and then flip to cook the other side.

Repeat to finish batter

Create the tree by placing the largest pancake on a plate, top with 1-2 tbs yoghurt and some sliced strawberries

Repeat step 6, slowly building up to the smallest pancake

Top with a dollop of yoghurt to finish and place the star on top

Decorate with coconut and maple syrup
