Cacao Bliss Balls

Make these as part of your weekly meal prep to take to work during the week!
Cacao Bliss Balls
Makes 8
Ingredients

15 dried dates (approx. 80g)

2 tbs date water
-
1/2 cup oats
-
1 cup almond meal
-
2 tbs cacao powder
-
1 tbs maple syrup
-
2 tbs coconut oil, melted
-
1/4 cup shredded coconut, extra for coating

Pinch of salt
Method

Place dates in a small bowl or a mug and cover with boiling water for 2 minutes to soften

Blitz oats in a food processor to make oat flour (if you don't have a food processor, you can leave them as they are)

Add dates to a mixing bowl with remaining ingredients, including the 2 tbs of the date water

Using hands, mix ingredients to combine, breaking up dates to help mixture come together

Roll into 8 balls

Spread some coconut on a flat surface or plate

Roll balls through coconut to decorate
-
Refrigerate for 30 minutes before serving
Balls can be kept in the fridge for up to two weeks, or in the freezer for one month
