Sweet Potato Brownie Slice

Alot of people speak negatively about adding vegetables in baked goods and that this is a diet culture food, but you know me, I don't like to label food. I'm all for a delicious and gooey chocolate brownie, but I also like to experiment in the kitchen and for my gluten free people, this is an alternative that you could try. And if you aren't gluten free, you might like the texture of this one too!
Sweet Potato Brownie Slice
Makes 12 slices
Ingredients

200g @fullgreen.official sweet potato rice or steamed & mashed sweet potato

1/4 cup descicated coconut

1 cup almond meal

2 tsp baking powder
-
1/3 cup cacao powder

1 tsp cinnamon
-
3 eggs
-
1/4 cup coconut oil melted

1 mashed banana
-
1/4 cup yoghurt
-
50g dark chocolate
-
Flaked almonds for decoration
Method

Pre heat oven to 180°c and line a baking dish with grease proof paper

Add all ingredients in a bowl except the chocolate and almonds and mix well

Pour into dish

Break chocolate into 12 pieces and place on top of mixture, gently push so the pieces submerge

Sprinkle with flaked almonds

Cook 20-25 minutes

Cool and then slice into 12 pieces (a bit of chocolate should be inside each piece)
