Hi-Fibre Pancakes

These pancakes are super easy to make and are filling thanks to the extra protein and fibre from the almond meal and All Bran. And better yet, they are fluffy and light! I like to serve my pancakes with yoghurt and fruit. You can also try serving these with maple syrup, jam, granola or peanut butter.
Hi-Fibre Pancakes
Serves 1
Ingredients

1/4 cup All Bran (or uncontaminated oats of gluten free)

1/4 cup milk of choice

1/4 cup almond meal

1 egg

1 banana
-
1/2 tsp cinnamon

Oil for cooking
Method

Add All Bran and milk into a small bowl or cup and leave to stand for 5 minutes so that the bran softens

In the meantime, mash banana and mix with remaining ingredients in a separate bowl. Add the bran once it is soft and combine with banana mixture. Add 1/2 tsp of cinnamon (optional)

Heat a pan on low-medium heat and add a dash of olive or coconut oil

Pour 1/3 cup batter into pan, smoothing out with the back of a spoon. Cook on 1 side for 1-2 minutes until the batter starts to bubble then flip and cook for a further 1-2 minutes so that both sides are brown

Repeat using the remaining batter
