Zucchini & Carrot Slice

This slice is so versatile. You can eat it for lunch and dinner with a side salad or as a snack. I like to slice it into single portions after cooking and place them in the freezer for when I need a quick meal.

Zucchini & Carrot Slice

Serves 6

  • 2 carrots, grated

  • 2 zucchini, grated

  • Half a brown onion, grated or diced

  • 7 medium-large eggs

  • 100g sliced ham (optional)

  • 100g tasty or cheddar cheese, grated

  • 1tsp tumeric

  • Pepper to taste

  • 3/4 cup self-raising flour

Tip: if you have a food processor, use it for the carrot, zucchini, onion and cheese. It saves a bit of time

  1. Pre-heat oven to 180°c

  2. Add all ingredients in a large bowl

  3. Mix until combined

  4. Pour into a lined rectangle baking dish

  5. Cook for about 30 minutes or until top is golden brown
