Tumeric, Zucchini & Ricotta Salad

A super easy and refreshing salad perfect for those Spring days! This makes a great side salad, or you use it to top your toast. Just add a poached egg and you tick all the boxes

Tumeric, Zucchini & Ricotta Salad

Serves 2-4

  • 1 zucchini, peeled into ribbons

  • 1 cup baby spinach

  • 1/2 tsp tumeric

  • 1 tbs olive oil

  • 2 tbs currants

  • 6 tbs soft ricotta

  • Pepper to taste

  1. Add zucchini, spinach, tumeric, oil, currants and 2 tbs ricotta into a bowl and mix until zucchini is coated. Add pepper to taste

  2. Place on a serving platter and dollop remaining ricotta on top
