Sweet Potato Brownie Slice

If you know me, you will know that I love sneaking vegetables into baking! I was gifted some sweet potato rice at an event I went to in London and had to give it a try in baking. The result was this delicious and moist sweet potato brownie slice!
Sweet Potato Brownie Slice
Makes 12 slices
Ingredients

200g @fullgreen.official sweet potato rice or steamed & mashed sweet potato

1/4 cup descicated coconut
-
1 cup almond meal
-
2 tsp baking powder
-
1/3 cup cacao powder
-
1 tsp cinnamon
-
3 eggs
-
1/4 cup coconut oil melted

1 mashed banana
-
1/4 cup yoghurt
-
50g dark chocolate
-
Flaked almonds for decoration
Method

Pre heat oven to 180°c and line a baking dish with grease proof paper

Add all ingredients in a bowl except the chocolate and almonds and mix well
-
Pour into dish
-
Break chocolate into 12 pieces and place on top of mixture, gently push so the pieces submerge

Sprinkle with flaked almonds

Cook 20-25 minutes

Cool and then slice into 12 pieces (a bit of chocolate should be inside each piece)
