Sweet Potato Brownie Slice

If you know me, you will know that I love sneaking vegetables into baking! I was gifted some sweet potato rice at an event I went to in London and had to give it a try in baking. The result was this delicious and moist sweet potato brownie slice!
 

Sweet Potato Brownie Slice

Makes 12 slices

Ingredients

  • 200g @fullgreen.official sweet potato rice or steamed & mashed sweet potato

  • 1/4 cup descicated coconut

  • 1 cup almond meal

  • 2 tsp baking powder

  • 1/3 cup cacao powder

  • 1 tsp cinnamon

  • 3 eggs

  • 1/4 cup coconut oil melted

  • 1 mashed banana

  • 1/4 cup yoghurt

  • 50g dark chocolate

  • Flaked almonds for decoration

Method

  1. Pre heat oven to 180°c and line a baking dish with grease proof paper

  2. Add all ingredients in a bowl except the chocolate and almonds and mix well

  3. Pour into dish

  4. Break chocolate into 12 pieces and place on top of mixture, gently push so the pieces submerge

  5. Sprinkle with flaked almonds

  6. Cook 20-25 minutes

  7. Cool and then slice into 12 pieces (a bit of chocolate should be inside each piece)
