Harissa Eggplant

If you love eggplant and a bit of spice then you will love this! If you are new to spicy foods, I recommend reducing the Harissa paste by half to see how you tolerate the heat. 

Harissa Eggplant

Serves 4 as a side

  • 2 small eggplant, cut into large cubes

  • 3 tbs extra virgin olive oil

  • 2 tbs harissa paste

  • 1 tbs honey 

  • 2 tsp soy sauce 

  • Sprinkle of sesame seeds

  1. Heat oil over medium heat in a frypan

  2. Add eggplant and cook, stirring occasionally for 15 minutes, or until soft

  3. Add remaining ingredients and coat eggplant

  4. Cook for a further 5 minutes

  5. Transfer to bowel and sprinkle with sesame seeds
