Halloumi Stuffed Hassleback Pumpkin

This super easy side dish will wow your dinner guests. Just 3 ingredients and less than 10 minutes to prepare.

Halloumi Stuffed Hassleback Pumpkin

Serves 6-8


  • 1 butternut pumpkin

  • 1 packet of halloumi

  • 1 bunch of fresh sage (basil would work well too)

  • Olive oil

  • Pepper


1. Slice pumpkin in half, then turn each side face down and slice 1-2 cm a part being careful not to cut through to the bottom (tip place skewers on either side of the pumpkin to stop the knife)

2. Thinly slice hallomi

3. Stuff one halloumi slice with a sage leaf into each gap of the pumpkin

4. Drizzle with a little olive oil and a sprinkle of pepper

5. Cook in preheated oven (180°c) for 40 minutes

6. Serve warm
