Halloumi & Zucchini Fritters

Delicious vegetarian option for breakfast, lunch or dinner! You can serve these with a poached egg or smoked salmon and a side salad.

Halloumi & Zucchini Fritters

Makes 15

Ingredients
  • 2 zucchini, grated

  • 2 eggs

  • 5 tbs plain flour

  • 2 spring onions, thinly sliced

  • 100g Halloumi, grated

  • Extra virgin olive oil for cooking

  • Guacamole to serve (you can make this by simply smashing an avocado with thinly sliced red onion, lemon juice, salt and pepper)

Method
  1. Squeeze the liquid from the zucchini by hand or pressing into a sieve

  2. Add zucchini, eggs, flour, oniom and halloumi into a bowl and mix to combine

  3. Heat a large fry pan on medium-high heat with 1/2 tbs oil

  4. Place 3 or 4 large spoons of mixture in the pan and cook for 1-2 minutes before flipping, press down with a spatula to flatten

  5. Cook for a further 1-2 minutes until cooked through

  6. Repeat steps 3 to 5 until all mixture is used

  7. Serve fritters with guacamole and sides
