Eggy Crumpet

A spin on the classic version of French Toast, this recipe uses crumpets instead of bread. Crumpets act like a sponge and soak up the egg mixture really well. You can also make a savoury version if you prefer and top the crumpets with avocado, tomato and a drizzle of extra virgin olive oil.

Eggy Crumpet

Serves 3

Ingredients

  • 6 crumpets

  • 4 eggs

  • 1 tbs milk

  • 250g smooth ricotta

  • 1 tbs honey, extra to drizzle

  • 200g berries of choice

  • 2 bananas

Method

1. Heat a large non-stick pan on medium heat
2. Whisk eggs and milk in a large bowl
3. Soak 2-3 crumpets at a time in the egg mixture, coating both sides
4. Cook crumpets for 1-2 minutes on each side until egg has cooked
5. Repeat steps 3 and 4 for remaining crumpets
6. While cooking crumpets, mix the honey through the ricotta
7. To serve, top with the honey ricotta, berries, banana and an extra honey drizzle
