Easy Peasy Green Falafel

As the title says, these are really easy to make with the help of a food processor. These make a nice snack served with hummus or you can add them to your favourite salad. 

Easy Peasy Green Falafel

Makes 10

Ingredients
  • 400g chickpeas, drained and rinsed

  • 1/2 cup blanched peas

  • 1 garlic clove

  • 1 tsp cumin

  • 2 tbs tahini

  • 2 handfuls baby spinach (about 20g)

  • Juice from 1/2 lemon

  • 1/2 tsp salt

  • 1/4 tsp chilli flakes

  • 1/2 cup bread crumbs

  • 2 tsp sesame seeds

  • 4 tbs olive oil

Method
  1. Pre-heat oven to 180⁰c and line 1 baking tray with baking paper

  2. In a mixing bowl or food processor add chickpeas, peas, garlic, cumin, tahini, spinach, lemon juice, salt and chilli flakes

  3. Blend in the food processor or with a stick blender until combined

  4. Stir through bread crumbs and sesame seeds

  5. Heat a large fry pan with 2 tbs olive oil over medium-high heat

  6. Roll 5 tablespoons mixture into balls and place in the pan. Flatten slightly with the back of a spatula and cook on each side until slightly brown

  7. Remove and place on baking tray

  8. Repeat step 6-7 with remaining mixture

  9. Cook in the oven for 10 minutes to finish cooking
