Coconut & Vanilla Granola

This granola combines coconut and vanilla to make a delicious cereal. I like to add granola to yoghurt or a sprinkle on porridge or overnight oats for crunch.

Although granola is super tasty, it is calorie dense so be mindful of your portion size. I recommend to stick to 1/4 cup - 1/2 cup serve.

Coconut & Vanilla Granola

Ingredients

  • 2 cups rolled oats

  • 1/4 cup each of chopped almonds, pecan and macadamia nuts (can swap for any nuts available)

  • 2 tbs sunflower seeds

  • 2 tbs pepita seeds

  • 2 tbs maple syrup

  • 3 tbs coconut oil, melted

  • 1 tsp vanilla extract

  • 1/2 cup coconut flakes

  • 1/4 cup goji berries (optional)

Method

  1. Pre-heat oven to 180°c fan forced

  2. Add all ingredients except goji berries into a large bowl and mix to combine so that all the dry ingredients are evenly coated

  3. Pour onto 2 lined baking trays. Make sure the mixture is relatively flat but sticking together (it is really important not to overcrowd the granola otherwise the air can't circulate and it won't crunch up)

  4. Bake for 10 minutes 

  5. Set aside to cool

  6. Add goji berries to the tray and then transfer granola to an airtight container

Can keep for 2-3 weeks
