Christmas Halloumi Tree

These Halloumi Trees make a cute addition to your festive luch or dinner. You can swap the halloumi for any hard cheese such as cheddar, Swiss or gouda. Get creative with hummus and different pesto flavours or a salsa. The ribbons will also work with carrot, eggplant or cucumber.

Makes 12
Ingredients
1 small baguette (baguettine)
2 tsp extra virgin olive oil
4 tbs pesto - why not try making it yourself with this recipe
1 small zucchini
100g halloumi
You will need 12 toothpicks or skewers to make the trees
Method
Slice the baguette into 12 rounds
Heat the oil in a large fy pan on medium heat
Toast the bread in the pan, flipping after 1-2 minutes to rown each side.
Remove the bread from the pan and set aside to cool
Peel the zucchini lengthways into ribbons (note try to make them as wide as possible) and add to the fry pan. Toss for 1 minute until just soft and remove
Next, create 1cm slices of halloumi and cook these in the fry pan on each side until brown
Slice halloumi so that you have 12 triangles (you may have some left over ends which you can eat or add to another dish). If you want to get really creative you can even cut the cheese into a star shape
Lay the baguette on a platter or plate and spoon pesto onto each one
Now for the fun (but fidly) part. Create a "tree" with the zucchini ribbons by weaving 2-3 ribbons onto the toothpick or skewer
Place the halloumi "star" on top and then stick a tree into each baguette round
Now you're ready to wow your guests!
