A twist on the classic pancake recipe, adding cacao powder for chocolatey goodness. I love the combination of a chocolate pancake topped with yoghurt and berries for a pop of colour.
1 cup of milk of choice
1 tsp vanilla essence
3 tbs sugar
2 tbs cocoa or cacao powder
1 cup of self-raising flour
Handful of chocolate chips (optional)
Butter for cooking
Toppings of choice, I've used Greek yoghurt, blueberries (frozen which were microwaved), pumpkin seeds and a sprinkle of ground flaxseed
Add egg, milk, vanilla, sugar, cacao and flour in a medium size mixing bowl and whisk to combine until the batter is smooth
Heat a fry pan on medium heat and carefully wipe the base with some butter or oiled kitchen paper
Pour 1/3 cup batter into the pan. Cook on 1 side for 1-2 minutes until the batter starts to bubble then flip and cook for a further 1-2 minutes so that both sides are brown. You might need to adjust the heat if the pancakes are cooking too quickly.
Repeat using the remaining batter, adding the chocolate chips as desired (note: ff you add chocolate chips, sprinkle them on the top side after pouring the batter in the pan)
Create a stack (I suggest 3-4 pancakes) and decorate as desired
