Carrot Cake Porridge

You know how much I love adding extra veg into baked goods to #makeveggiessexy again. Carrot cake is one of my favourite soul foods so I had to try making a carrot cake porridge. A great alternative to your tradiitonal oats and a way to bump up your veg intake. You could also try baking it in the oven after cooking to crisp up the top. 

Carrot Cake Porridge

Serves 1


  • 1/2 cup rolled oats

  • 3/4 - 1 cup milk of choice

  • 1 tsp cinnamon

  • 1/4 tsp ground ginger

  • Pinch of salt

  • 1/2 small carrot, finely grated

  • 1 tbs currants or sultanas

  • Greek yoghurt for topping

  • Almond butter for topping

  • Honey to drizzle


  1. Add oats, 3/4 cup of milk, spices, salt and carrot into a small pan

  2. Heat on medium-high heat, stirring consistently for 2-3 minutes until the oats begin to thicken. Add the remaining 1/4 cup milk if desired for a thinner texture

  3. Stir through the dried fruit

  4. Pour into a bowl and top with Greek yoghurt, almond butter and honey
