Carrot Cake Bars

Bars, slice, flapjacks... these were hard to name! But one thing I'm certain of is that these are so easy to make and taste great! These bars make a breakfast on-the-go, snack or dessert (I've been eating one topped with Greek yoghurt and honey).

 

Carrot Cake Bars

Makes 6 bars or 9 smaller squares

Ingredients

  • 1 medium carrot, grated

  • 1 cup rolled oats

  • 1/2 cup wholemeal self raising flour

  • 1/3 cup currants

  • 2 tsp cinnamon

  • 1/4 cup sunflower oil (or another light oil)

  • 1 egg

  • 2 tbs honey or date syrup

Method

  1. Pre-heat oven to 180°c and line a small baking dish with baking paper

  2. Add all ingredients in a bowl and mix to combine

  3. Pour into baking dish and flatten with a fork. Pressing down softly

  4. Cook for 20 minutes. Cool before slicing
