Breakfast Crumble

I had originally intended to make this as a dessert, but instead I divided it into some containers with Greek yoghurt and took it to work for breakfast. Eat this for breakfast, dessert or as a snack. Whatever works for you!

Breakfast Crumble

Serves 4

Ingredients
  • 4 apples, cored and diced into 2cm cubes

  • 2 tsp cinnamon 

  • 1 tsp vanilla extract

  • 2 tbs water

  • 60g butter, melted

  • 80g plain flour

  • 60g oats

  • 2 tbs sunflower seeds

  • 20g macadamia nuts roughly chopped

  • 20g walnuts roughly chopped

Method
  1. Pre-heat oven to 180°c

  2. Heat a small saucepan on medium heat

  3. Add apples, water, vanilla and cinnamon and simmer, stirring occasionally until apple has softened

  4. While the apple is cooking, add all remaining ingredients into a small bowl and mix until combined. The crumble should resemble small pebbles

  5. Pour the apple into a square baking dish

  6. Top with the crumble mixture and press down softly to flatten

  7. Cook in the oven for 10 minutes

  8. Serve with Greek yoghurt
