ABC Parfait

If you are looking to mix up your breakfast routine and make something a little bit more fancy then this is worth a try! This parfait Apple and Berries for sweetness, Chia seeds and Greek yoghurt for a protein punch and granola for crunch. It also makes a great dessert and can be prepared ahead of time. Just leave the granola to add before serving so it maintains crunch. 

ABC Parfait

Serves 2

Ingredients

  • 1 cup raspberries

  • 1/2 cup water

  • 1 tsp vanilla extract

  • 2 tbs chia seeds

  • 3 tbs milk of choice

  • 3 tbs water

  • 1/2 tsp cinnamon

  • 1 cup yoghurt

  • 1 small apple, diced

  • 1/2 cup of my Coconut & Vanilla Granola

  • 2 tsp almond butter

Method

  1. Add raspberries, vanilla and water in a small pan on medium heat

  2. Simmer for 10 minutes, stirring regularly, until raspberries have broken down and the water has evaporated to form a thick sauce

  3. Add chia seeds, milk, water and cinnamon in a mug. Stir to combine and leave in the fridge for 10 minutes to set

  4. Once the chia is ready, give it a stir and then divide it into two serving glasses

  5. Layer 1/4 cup of yoghurt in each glass

  6. Divide the raspberry sauce between the glasses

  7. Add the second layer of yoghurt

  8. Divide the apple and granola

  9. Drizzle almond butter

  10. Enjoy!​
