Pumpkin Hummus

I am loving hummus at the moment! I am a little obsessed with making my own and changing the flavour with different veggies. SO far I've tried beetroot, artichoke and now pumpkin! Hummus is really easy to make. All you need is a blender. 

Pumpkin Hummus

Serves 2-8 depending on how it is eaten

Ingredients

  • 1 can butter beans, rinsed

  • 160g roast pumpkin or squash (skin removed)

  • 1 garlic clove

  • 2 tsp ground cumin

  • 1/2 tsp chilli flakes

  • 1/2 tsp ground coriander

  • 2 1/2 tbs extra virgin olive oil

  • 2 tbs water 

  • Salt and pepper to taste

Method

  1. Add all ingredients in a food processor

  2. Blend until smooth

  3. Serve with veggie sticks or crackers for a snack, spread on toast or dollop in a salad
