Double Choc Peanut Butter Cookies

These cookies have a secret ingredient that makes them higher in protein and fibre than your average cookie. Can you guess what it is?

Double Choc Peanut Butter Cookies

Makes 10-12

Ingredients

  • 1/2 cup rolled oats

  • 1 can black beans, rinsed and drained

  • 1 tbs cacao powder

  • 1/3 cup peanut butter

  • 1/4 cup chopped peanuts

  • 1 tsp baking powder

  • 2 tsp honey

  • 50g dark chocolate, chopped into small pieces

Method

  1. Pre-heat oven to 180°c and line a baking tray with baking paper

  2. Blend oats in a food processor until they have a flour-like consistency

  3. Add all remaining ingredients (except chocolate) and blend together until dough forms

  4. Tip into a bowl and mix through chocolate

  5. Roll heaped tablespoons into balls, place on tray and slightly flatten with a fork

  6. Cook for 15-20 minutes
