Banana Bread

This is such an easy recipe to follow (you only need one bowl). The more ripe your bananas the better as it really enhances the flavour and natural sweetness. You can freeze the slices for up to 1-2 months, but I doubt it will last that long!

Note: if you use a plant based milk this banana bread is vegan and dairy free!

Banana Bread

Ingredients

  • 2 ripe bananas, mashed

  • 1 1/4 cup wholemeal flour

  • 1 tsp baking powder

  • A pinch of salt

  • 1 tsp cinnamon

  • 1/3 cup brown sugar

  • 1/2 cup sunflower oil (or any light coloured oil)

  • 1/2 cup milk of choice

  • 1 tsp vanilla extract

Method

  1. Pre-heat oven to 180°c

  2. Add all ingredients in a bowl and mix until just combined (careful not to over-mix)

  3. Pour into a lined loaf tray and bake for 30 mins or until a skewer comes out clean

  4. Slightly cool before slicing
