No-mayo Slaw

Store bought coleslaw can be so heavy on mayo I find that I can only eat a small amount and it is definitely not something I would eat every day. It's a shame because not only does that increase the saturated fat content, but all that mayo hides the wonderful flavour of the cabbage. So my solution is this no-mayo slaw! Using yoghurt for creaminess, this healthier alternative pairs well with roast meat or on a pulled pork burger. And check out that colour!  

No-mayo Slaw

Serves 4-6

Ingredients

  • 1/2 red cabbage, finely shredded

  • 6 small radish, finely sliced

  • 1 carrot, grated

  • 1 pink lady apple, grated 

  • 2 tbs sultanas

  • 1/2 cup Greek or natural yoghurt

  • 1 garlic clove, minced

  • 1/2 lemon

  • 3 tsp apple cider vinegar

Method

  1. Add cabbage, radish, carrot, apple and sultanas in a bowl and mix together

  2. To make the dressing combine remaining ingredients in a small bowl and stir to combine

  3. Add dressing to the cabbage and stir to combine

 

Tip: this tastes even better the next day as the cabbage absorbs the flavours from the dressing
