One Pot Poached Pear Porridge

November, 2018

This one pot porridge is so simple to make and was created from my desire to reduce washing up and waste when I was experimenting with recipes one morning. Tasty and only one pot to wash- could it get any better?

The recipe asks you to add a tea bag to the water. I have made this with Earl Grey, sour cherry and rose. Any herbal tea will work well. If you don't have a tea bag you can use loose leaf and sieve the leaves at step 4, while retaining the water to cook the porridge. Or you can substitute the tea for 2 drops of vanilla essence. It really is so adaptable!

One Pot Poached Pear Porridge

Serves 1

Ingredients

  • 1 1/2 cups water

  • 1 tea bag of choice (Earl Grey or a fruit tea works well)

  • 1 pear, peeled lengthways (it looks nicer)

  • 1/2 cup rolled oats

  • 1/2 cup milk

  • 1 tbs chia or hemp seeds (1/2 for porridge and 1/2 for topping)

  • 3 tbs Greek yoghurt

  • 1 tsp honey

  • 2 tbs walnuts

Note: you can either caramelise the walnuts at step 2 or if you want to save on washing up, just sprinkle the uncooked walnuts and honey as toppings at the end.

Method

  1. Add water, tea bag (or vanilla essence) and pear in a small saucepan. Poach on medium-high heat with lid on for 5-10 minutes turning occasionally so that all sides are cooked. The cooking time will depend on how ripe the pear is. It is ready to take out when a fork will easily pierce the flesh

  2. While the pear is cooking, add honey and walnuts to a second pan and cook on low-medium heat for about 4 minutes to caramelise, stirring so that the walnuts don't stick to the bottom. Set aside.

  3. Once pear is ready remove and place aside

  4. Remove the tea bag from the water

  5. Add milk to the tea water with oats and half of the chia seeds. Lower the heat to low-medium and stir for about 1-2 minutes until creamy

  6. Pour porridge into a bowl, top with pear, yoghurt, remaining chia seeds and caramelised walnut.
