Mocha Pancakes

If you like coffee and chocolate then you will live these mocha pancakes! 

Mocha Pancakes

Serves 1

Ingredients

  • 1/4 cup All Bran (or uncontaminated oats if gluten free)

  • 1/4 cup milk of choice

  • 1/4 cup wholemeal self-raising flour

  • 1 tbs mocha protein powder (I used That Protein) or 2 tsp instant coffee and 1 tbs cacao powder

  • 1 egg

  • 1 banana, sliced

  • 1 tsp coconut oil

  • 1 tsp cacao powder

  • 2 tsp almond butter

  • Oil for cooking

Method

  1. Add All Bran, milk and egg into a small bowl or cup Whisk to break up egg and leave to stand for 5 minutes so that the bran softens

  2. Add flour and protein powder to wet ingredients and mix to combine

  3. Heat a pan on low-medium heat and add a dash of olive or coconut oil

  4. Pour 1/3 cup batter into pan, smoothing out with the back of a spoon. Cook on 1 side for 1-2 minutes until the batter starts to bubble then flip and cook for a further 1-2 minutes so that both sides are brown

  5. Repeat using the remaining batter

  6. To make the chocolate sauce add the coconut oil and cacao to a mug and mix to combine (if the oil has solidified heat in the microwave for 30 seconds) 

  7. Assemble pancakes and drizzle chocolate sauce and peanut butter. Add sliced banana and enjoy!
