Grilled Nectarine Oats

Have you tried grilling fresh fruit before?

 

It creates a whole new flavour and texture! I love the addition of grilled nectarine to a simple overnight oat recipe. 

Grilled Nectarine Oats

Serves 1

Ingredients

​For the overnight oats:

  • 1/2 cup of rolled oats

  • 3/4 cup yoghurt

  • 1/4 cup milk

  • 1/2 grated apple

  • 1/2 tsp each of sunflower and pumpkin seeds

  • 1 tsp chia seeds

  • 1 tbs chopped walnuts

For the grilled nectarine:

  • 1 nectarine

  • 1 tsp maple syrup

  • 1 tsp coconut oil 

Method

  1. For the oats mix all ingredients together in a container or bowl. Refrigerate for 2 hours or overnight

  2. Slice nectarine into 8 and grill over low-medium heat in a fry pan with maple syrup and coconut oil, turning to brown both sides

  3. Serve with oats
