Christmas Spice Granola

This granola recipe has added spices that smell like Christmas! I love making a big batch and gifting it in jars or you can keep it for yourself and eat it with yoghurt and fruit or add as a topping with porridge. Don't just save this for Christmas - it can be eaten all year round!

Christmas Spice Granola

Serves- to hunger

Ingredients

  • 1 1/2 cups puffed wheat (or puffed quinoa or rice)

  • 1/2 cup rolled oats

  • 1/4 cup chopped macadamia nuts

  • 1/4 cup chopped pistachio nuts

  • 1/4 cup pepita seeds

  • 1/2 cup coconut flakes

  • 2 tbs coconut oil (melted)

  • 2 tbs date or maple syrup

  • 1 1/2 tsp cinnamon

  • 1 tsp ground ginger

  • A pinch of ground clove

  • A pinch of salt

  • 1/3 cup dried cranberries

Method

  1. Pre-heat oven to 180 degrees Celsius

  2. Add all ingredients in a bowl and mix to coat puffed wheat

  3. Spread evenly on a baking tray lined with baking paper

  4. Cook for 15 minutes

  5. While cooling pour 1/3 cup dried cranberries over the granola

  6. Store in an airtight container for up to 3 months
